Salmon & Sturgeon Smoked Fish Recipe
Cut fish fillets cross wise into 2 to 3 inch wide strips. Salmon skin on, Sturgeon skin off. Trim fat from Sturgeon fillets. Add 2 cups rock salt to 1 gallon water. Bring to boil, then let cool. Add 1 cup brown sugar to brine. Soak fish in brine for 2 to 3 hours, depending on taste. 3 hours will be saltier. Then smoke for 10 hours or until done. Each smoker runs at different temperatures. With a smoker that runs cooler, some times sturgeon will have to be baked in the oven for 20 min. to finish cooking the smoked fish.
